Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup buttermilk
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 tbsp powdered sugar
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 4 brioche buns, buttered and toasted
  • Dill pickle chips
  • Peanut oil, for frying

Instructions

    Pound chicken breasts to an even 1/2-inch thickness. Brine in pickle juice for 2 hours in the fridge, then marinate in buttermilk for another 2 hours.

    Whisk the egg into the buttermilk mixture. In a separate bowl, combine flour, powdered sugar, paprika, salt, pepper, and garlic powder.

    Dredge each breast in the flour mixture, dip back into the buttermilk-egg mixture, then dredge again, pressing firmly so the coating sticks.

    Heat 2 inches of peanut oil to 350°F in a heavy skillet.

    Fry breasts in batches, 3-4 minutes per side, until golden brown and cooked through (165°F internal).

    Toast the buns with butter, spread with a little honey or Dijon if you like, and build the sandwich: bun, chicken, two pickle chips, top bun.
